Well lets start something around here since the other classes are slacking. First of all some usefull links:

I am using this elitistjerk site cause most of the best players in the world use it and post on it ...and there are the peoples that make tests and post the results.
I will mainly discuss about fury on this topic cause it is my spec and the best PVE spec atm... So for fury warrs the dps calculation spreedsheet:

That is made by Landsoul one of the most respected and best warrs of this wow game... u will find all viable fury/arms items with their best enchants and best geming ... a very good calculation of dps on each stat of the items, real time imports of caracters from armory and very impressive update of items/ abilities change. U will see also implemented how to make the best rotation for fury, explained how u can make the best dps with ur gear etc...Thats for the moment i will type more in another moments of slacking ...
